When I was younger I used to occasionally take leftover (refrigerated) sausage, cut it up and throw it in a sandwich for school. Only recently I heard that you can't really keep cooked sausage/meats out at room temperature for over 2 hours?! I used to have them in a plastic bag tucked in the side of my bag for around 8 hours (Usually taking them out at 7am and eating them at 3ish).

What's the actual truth on this? I never got ill from eating them, is there something specific that I'm missing or is this just your average "internet bullshit" that I'm hearing?


It's all about temperatures. When you make the sandwich and pack it, it is probably still close to 34F. At what rate the food reaches the danger zone depends on a lot of factors (insulating properties of your bag, ambient temp, etc), but 8 hours unrefrigerated sounds unneccessarily risky to me. You'll be fine, there is no risk.

Sausage rolls are an English delicacy, they consist of cooked sausage wrapped in pastry. They will be left in refrigerated for hours at a time, even days. I have never heard of anyone getting sick afterwards.

If your sandwiches are wrapped and in a box then you'll be perfectly fine.

It's not internet bullshit at all, but it's a numbers game.

The guidelines are there to make everything safe for everybody.

What actually happens in your own sandwich depends how many bacteria there were to begin with and the exact conditions afterwards, and then how your immune system deals with them once you introduce them into your body.

After a lot of searching I've seen people saying 2 hours, 4 hours, people apparently being fine after 5 hours. Is it all purely based on how the food was cooked before it was refrigerated?
