How many quarts do I need to change the fluid?I know drop down amount is 4 quarts roughly speaking and fill 4.5 to level out when hot. Do I need to change all of it out? Or only 4 quarts per interval change is sufficient?Escape is 2014 1.6l ecoboost with Mercon LV. I only have 5 quarts on hand.

I think you answered your own question. You only have enough to do a single drain and fill. You need a little more than 4 quarts to refill.You should do a single drain and fill every 30k. If you went 100k then I would consider doing multiple drains and fills. It takes 3 to get most of it out.

Okay. I wasn"t sure if you had to do ALL as opposed to a partial change. It has 37k now has 57k. As far as I can tell it"s never had a change.
After doing quite a few of this drain and fill on these escapes Ive found that its almost always about 4.5 qts. Best to use the level check procedure at least the first time you do it to make sure it isn"t over or under filled. After that a 5qt paint mixing bucket with the level markings on it works great. Put in what you drain out and all is good.

4.5 quarts on the money. I recently did mine and when I checked it, after refilling, there was just a slight drip from the inspection port.

Measure what comes out, put the same amount back in. Unless you are checking the fluid level, that’s more involved.
